If present trends continue, the bounty of seafood we enjoy today will be a fond memory by 2050. Overfishing, pollution, climate change, the destruction of coral reefs: all are turning our great underwater ecosystems into inhospitable places for the sea creatures we love to eat. What can consumers do to help save the oceans while enjoying seafood, too? The answers, happily, are delicious. Ecologists agree that one key is pointing our appetites to the lower part of the food chain. There’s plenty of flavor lurking down there: anchovies, sardines, oysters, mussels, and the like. But that doesn’t mean kissing goodbye to the top feeders. Sure, the days of unthinkingly gobbling up bluefin tuna, which verges on extinction, are over. But it is vital that consumers support well-managed—and delicious—fisheries like Alaska’s glorious salmon runs. In this class, Mother Jones (www.motherjones.com) food writer Tom Philpott will deliver an overview of the problems facing the oceans while Chef Lidia Bastianich will whip up a few of the solutions. Lidia will demonstrate a 3-course pesce menu paired with complementary wines. Guests will enjoy everything Lidia prepares featuring our freshest catches direct from Eataly’s Pesce Department. Class will be complete with adapted recipes and wine tasting notes to take home.

PARLARE E MANGIARE ALL’ITALIANA

What better way to learn Italian than through eating? In this 4-class series, you will learn how to speak and eat like an Italian without having to book a flight to Italy.

Our devoted Italian instructors will transport you to la dolce vita—taking you through a leisurely Colazione (breakfast), Pranzo (Lunch), Aperitivo (Italy’s version of Happy Hour) and Cena (Dinner). Each meal will feed your Italian vocabulary, as well as your Italian food fantasies.

CHEF’S KITCHEN

Join guest chefs as they prepare their signature dishes before your eyes.

Eataly invites you to take part in tastings and demonstrations led by both accomplished visiting chefs and Eataly’s own talented team. As chefs prepare their favorite dishes for you to enjoy, they will teach you the ins and outs of selecting ingredients and walk you through each recipe from dicing to final plating. Eataly’s best wines will be paired with each dish, giving you an education in toasting, Italian style.

APERITIVO

An Italian aperitivo is a nightly celebration, the closing down of a long day by toasting and snacking with friends. At Eataly’s Aperitivo, wine and beer producers will pair their delicious drinks with the perfect antipasti.

Kick off your evening with Eataly’s Aperitivo. You’ll mingle with some of the best winemakers, brewmasters and sommeliers around. Classes will be complete with tasting notes, suggested recipes and pairings. And if you like everything you had in class, you can visit Eataly’s wine shop and retail departments to host your own Aperitivo at home.

SPOTLIGHT ON ARTISANAL PRODUCTS

The word artisanal is often overused, but at Eataly we are not joking around. Let our producers who have been doing it for generations personally walk you through the steps and stories behind their products.

In our Spotlight on Artisanal Products, producers will illuminate the history of pure, good food prepared the old fashioned way. Products may be tasted on their own or featured in a recipe. Any way you slice it, quality is in the spotlight.

EAT-INERARIES

Travel Italy through your taste buds. Italy is so special because each region has a distinct history and food culture. Discover the nuances, sociological, scientific and nutritional, that make the whole boot radiate with flavor.

We love food and crave more knowledge about its origins. Some classes will be health-focused, while others will provide sociological context and scientific snippets. Trips outside the classroom will offer a new perspective on what and why we eat.

Additional Details: The classroom at La Scuola seats approximately 20 students, allowing a high level of interaction with visiting instructors. Almost all classes are comprised of demonstrations, tastings and/or lectures. On occasion, La Scuola’s classes will take place outside of the actual classroom. Class price and duration may vary.
